Spicy Pork and Bean Stew

A delicious and simple spicy stew with pork and butter beans.
Ingredients
- 150g of pork loin, diced
- 215g of tinned butter beans
- 1 small onion (approx 110g), finely chopped
- 100ml vegetable stock
- 1 tsp vegetable oil
- 2 tsp tomato puree
- 1 tsp white caster sugar
- 1/2 tsp mild chilli powder
- 1 tsp lemon juice
- 1 x small garlic clove, finely chopped

Method
- Heat the oil in a saucepan and fry the pork for 4-5 minutes over a medium-high heat or until slightly browned.
- Add the onion and garlic and cook for 3-4 minutes, or until the onion is soft. Add the chilli powder and fry for 1 minute. Add the remaining ingredients, stir well and bring to the boil.
- Lower the heat, cover, and simmer for about 30 minutes.
- Season to taste with salt and pepper and serve immediately.
