Spicy Pork and Bean Stew

  • 215g of tinned butter beans
  • 1 small onion (approx 110g), finely chopped
  • 100ml vegetable stock
  • 1 tsp vegetable oil
  • 2 tsp tomato puree
  • 1 tsp white caster sugar
  • 1/2 tsp mild chilli powder
  • 1 tsp lemon juice
  • 1 x small garlic clove, finely chopped

  1. Heat the oil in a saucepan and fry the pork for 4-5 minutes over a medium-high heat or until slightly browned.
  2. Add the onion and garlic and cook for 3-4 minutes, or until the onion is soft. Add the chilli powder and fry for 1 minute. Add the remaining ingredients, stir well and bring to the boil.
  3. Lower the heat, cover, and simmer for about 30 minutes.
  4. Season to taste with salt and pepper and serve immediately.
