Grilled Salmon & Rocket Salsa

Grilled salmon served with a chunky avocado, rocket and red onion salsa and buttered new potatoes.

Ingredients

  • 7 medium new potatoes (approx 70g each), quartered
  • 70g of wild rocket leaves
  • 300g of cherry tomatoes, halved
  • 1 lime, juiced
  • 1 ripe avocado, stone removed and diced
  • 1 small red onion (approx 110g), finely chopped
  • 4 salmon fillets
  • 30g of pine nuts
  • 1/2 tsp white caster sugar
  • 3 tbsp olive oil
  • 1 pinch of crushed chillies, finely chopped
  • 1/2 clove of garlic, crushed
  • 1 tbsp margarine/butter

Method

  1. Preheat the grill to high. Cook the potatoes in lightly salted boiling water for 15 minutes, or until tender.
  2. Whilst the potatoes are cooking, mix the lime juice, sugar, garlic, crushed chillies and the oil together. Season generously with salt and pepper. Brush 1 tsp of the mixture over each salmon fillet. Set the remaining dressing aside for use in the salsa.
  3. Grill the salmon for 4 minutes on each side, or until cooked through. Set aside and leave to rest.
  4. Drain the potatoes, toss with the margarine/butter and season with salt and pepper.
  5. To make the salsa, toss the rocket leaves, red onion, avocado, cherry tomatoes and pine nuts with the dressing. Season with salt and pepper.
  6. Serve the grilled salmon with the buttered new potatoes and avocado salsa.
