Steak & Chips with Herb Butter

This recipe works in combination with: Bangers & Mash with Red Wine Gravy, Steak Pie, Toad in the Hole with Red Onion Gravy. This recipe features in these meal plans: British Classics.

Steak with a melting butter and parsley sauce and served with green beans and home-made chips.


  • 150g of beef rump steak
  • 1 x small baking potato, cut into thick chips
  • one-third 200g pack of green beans
  • 20g of butter, at room temperature
  • 1/2 small garlic clove, finely chopped
  • 2 tbsp olive oil
  • 1/2 tsp lemon juice
  • 1/4 tsp fresh parsley, finely chopped

  1. Mash 3 tsp butter, 1/2 tsp lemon juice and parsley in a bowl until blended. Roll into a ball, wrap in cling film and lightly flatten it into a thick coin shape with the palm of your hand. Refrigerate until needed.
  2. Parboil the potato chips in lightly salted boiling water for 5-6 minutes. Drain well and transfer to an ovenproof dish, drizzle with 1 tbsp oil. Season with salt and pepper and toss the chips to make sure they are evenly coated. Bake for 15-20 minutes, turning once.
  3. Meanwhile, heat 1 tbsp oil in a frying pan or griddle pan and season the steak with salt and pepper. Fry for 3-4 minutes on each side, for medium rare, or until it is cooked to your liking. Remove the steak, cover with foil and rest for 5 minutes.
  4. Cook the green beans in boiling water for 3-4 minutes, or until tender. Drain and add 1 tsp butter and the lemon juice and toss to evenly coat the green beans.
  5. Serve the steak topped with the herb butter alongside the chips and green beans.
