Pork & Butter Bean Stew

A delicious and nutritious pork, butter bean and tomato stew providing iron, fibre and plenty of potassium.

Ingredients

  • 4 thick cut pork loin steaks, fat removed and meat cut into 2cm cubes
  • 410g of tinned butter beans, drained and rinsed
  • 400g of tinned chopped tomatoes
  • 1 large onion (approx 210g), finely chopped
  • 1 granary (or white) baton/mini baguette
  • 40g of Parmesan cheese, grated
  • 1 tbsp olive oil
  • 1 tbsp tomato puree
  • 1 tsp mild chilli powder
  • 2 cloves of garlic, finely chopped
  • 2 tsp paprika
  • 2 tbsp margarine/butter

Method

  1. Heat the oil in a sauce pan and fry the pork for 3-4 minutes, or until lightly browned. Add the onion and garlic and fry for 3-4 minutes, or until tender. Add the chilli powder and paprika and fry for 1 minute.
  2. Stir in the chopped tomatoes, butter beans, tomato puree and 500ml water and simmer for 15-20 minutes, or until the stew develops a thicker consistency. Season to taste with salt and pepper and serve immediately.
  3. Serve the pork and bean stew with the granary bread, warmed if you like.
