Bacon & Avocado (2 days)

Sandwiches with bacon, lettuce, tomato and avocado.

Ingredients

  • 6 x rashers streaky bacon
  • 1 little gem lettuce, shredded
  • 1 small tomato (approx 75g), thinly sliced
  • 1 x avocado, stoned, peeled and sliced
  • 2 tbsp mayonnaise

Method

  1. Preheat the grill. Cook the bacon for 8-10 minutes, turning halfway through, until browned and crispy.
  2. Divide the bacon, avocado, tomato, little gem and mayonnaise evenly between sandwiches and lightly season with salt and pepper.
