Turkey Meatloaf & Mashed Potatoes

A home-made turkey meatloaf served with creamy mashed potatoes, green beans and gravy.


  • 500g of turkey mince
  • 1 medium onion (approx 185g), finely chopped
  • 4 medium baking potatoes (approx 320g each), peeled and diced
  • 1 large carrot (approx 185g), grated
  • 200g of fine trimmed green beans
  • 1 medium egg
  • 50g of breadcrumbs
  • 60ml of milk
  • 2 tbsp tomato ketchup
  • 3 tbsp margarine/butter
  • 3 tsp dried mixed herbs
  • 300ml gravy, made according to packet instructions
  • 1 tbsp vegetable oil
  • 2 cloves of garlic, finely chopped

  1. Preheat the oven. Heat the oil in a frying pan and cook the onion and garlic for 3-4 minutes, or until the onion is soft.
  2. Mix the onion, garlic, turkey mince, carrot, egg, breadcrumbs, ketchup and mixed herbs in a large bowl. Season generously with salt and pepper.
  3. Press the mixture into a lightly oiled loaf tin and bake in the oven for 1 hour, or until cooked through. (If you don't have a loaf tin, shape the mixture into a loaf shape and wrap it in tinfoil, transfer to a baking tray and cook as instructed.)
  4. Meanwhile, cook the potatoes and green beans to be ready about the same time as the meatloaf. Cook the potatoes in lightly salted boiling water for 8-10 minutes, or until tender. In a separate saucepan cook the green beans in lightly salted boiling water for 5 minutes, or until tender. Prepare the gravy according to the packet instructions.
  5. Drain the potatoes and mash with the milk and margarine/butter. Season to taste with salt and pepper.
  6. Cut the meatloaf into thick slices and serve with the mashed potato, green beans and gravy.
