Smoked Salmon Spaghetti

Splendidly simple. Spaghetti tossed with smoked salmon, lemon juice and black pepper and topped with Parmesan cheese.
Ingredients
- 50g smoked salmon, cut into thin strips
- 90g of spaghetti
- 2 tbsp Parmesan cheese, grated
- 1 garlic clove, finely choped
- 2 tsp lemon juice
- 1 tbsp olive oil

Method
- Cook the pasta according to the packet instructions.
- A couple of minutes before the pasta is cooked, heat the olive oil in a frying pan over a low heat and fry the garlic for 1 minute. Add the salmon and heat through.
- Once the pasta is cooked, drain well and toss with the garlic and salmon. Add the lemon juice and a generous pinch of freshly ground black pepper. Serve immediately topped with the Parmesan cheese.
