Tomato, Red Pepper & Cucumber Couscous

Couscous dish with cherry tomatoes, red pepper, cucumber and goat's cheese.


  • 1 red pepper, finely chopped
  • 150g of cherry tomatoes, halved
  • 1 half cucumber portion, chopped
  • 100g goat's cheese, cubed
  • 150g of couscous
  • 1 tbsp vegetable oil
  • 2 tsp dried mixed herbs
  • vegetable stock
  • 1/2 tsp white caster sugar
  • 1/2 tsp vinegar
  • 2 tbsp lemon juice

  1. Prepare the couscous according to the packet instructions using double strength stock in place of water. Stir in the mixed herbs.
  2. Heat the oil in a saucepan and cook the red pepper, tomatoes, sugar and vinegar for 2-3 minutes, or until the vegetables are tender.
  3. Stir the red pepper mixture, goat's cheese and cucumber into the couscous. Add the lemon juice, season to taste with salt and pepper and serve immediately.
