Beef Chow Mein

Chinese-style chow mein with soy and ginger marinated beef strips, broccoli, carrot and egg noodles.


  • 1 small onion (approx 110g), finely sliced
  • 225g beef rump steak, fat trimmed, cut into strips
  • 1 small broccoli, cut into florets
  • 1 medium carrot, thinly sliced
  • 150g of medium dried egg noodles
  • 2 tbsp light soy sauce
  • 1 garlic clove, finely chopped
  • 2 tsp fresh ginger, grated
  • 1 tbsp vegetable oil

  1. To make the beef marinade, mix together the garlic, ginger and soy sauce. Coat the beef strips in the marinade and set aside for as long as possible.
  2. Cook the noodles according to the packet instructions. Cook the broccoli in boiling water for 3-4 minutes, or until tender.
  3. Heat the oil in a wok or frying pan and fry the steak for 1-2 minutes, or until cooked to your liking. Remove and set aside. In the same pan, cook the onion and carrot for 1-2 minutes, or until tender.
  4. Add the beef strips, noodles and broccoli and heat through. Add soy sauce to taste and serve immediately.
