Easy Pork Stew

A hearty stew with pork, vegetables and a hint of chilli.


  • 3 closed cup mushrooms, thinly sliced
  • 2 medium tomatoes (approx 100g each), coarsely chopped
  • 1/2 medium onion, chopped
  • 1/2 medium carrot, chopped
  • 2 large new potatoes (approx 110g each), diced
  • 1 thick cut pork loin steak, cut into 1.5cm pieces
  • 1 garlic clove, finely chopped
  • 1 tbsp vegetable oil
  • 200ml vegetable stock, prepared according to the packet instructions
  • 1 tsp mild chilli powder

  1. Heat the oil in a saucepan and fry the onion, garlic and mushrooms for 2-3 minutes, or until the onion is soft. Add the pork and cook for 4-5 minutes, or until browned. Add the chilli powder and fry for 1 minute.
  2. Add the carrot, tomato, potato and stock to the pan and season with salt and pepper. Cover and simmer for 15-20 minutes, or until the vegetables are tender. Top up with a little water if the stew becomes dry. Season to taste and serve immediately.
