Simple Sausage Cassoulet

A quick and filling stew with sausages and butter beans.


  • half a 227g tin of chopped tomatoes
  • 1/3 small red onion, diced
  • 215g of tinned butter beans, drained
  • 3 value sausages, thickly sliced
  • 1 x small garlic clove, finely chopped
  • 1 tsp vegetable oil
  • 1/2 tsp dried mixed herbs
  • 1 tsp plain white flour

  1. Heat the oil in a large saucepan and cook the onion and garlic for 2-3 minutes, or until the onion is soft.
  2. Add the sausages to the saucepan and cook for 5 minutes, until the meat has started to brown.
  3. Stir in the flour and add the chopped tomatoes, butter beans and mixed herbs. Season with salt and pepper and simmer for 10 minutes, stirring occasionally. Add a little water if the cassoulet becomes dry. Serve immediately.
