Zesty Ginger Chicken

Chicken glazed with a ginger, honey and lime sauce and accompanied by tender purple sprouting broccoli and basmati rice.

- 1 lime, juiced and zested
- 200g of purple sprouting broccoli, chopped
- 2 skinless chicken breast fillets
- 140g of basmati rice
- 2 tsp ginger, finely grated
- 1 tbsp honey
- 2 tbsp light soy sauce
- 1 clove of garlic, finely chopped
- 1 tsp ground coriander

Method
- Preheat the oven. Mix the ginger, honey, ground coriander, soy sauce, garlic, lime juice and zest in a bowl, add the chicken and mix thoroughly.
- Transfer to a baking dish lined with foil and bake in the oven for 20 minutes, or until cooked through.
- Meanwhile, cook the rice according to the packet instructions. Shortly before the rice and chicken are finished cook the broccoli in a pan of lightly salted boiling water for 3-4 minutes, or until tender.
- Serve the zesty ginger chicken with the cooked basmati rice and purple sprouting broccoli.
