Zesty Ginger Chicken

Chicken glazed with a ginger, honey and lime sauce and accompanied by tender purple sprouting broccoli and basmati rice.

Ingredients

  • 1 lime, juiced and zested
  • 200g of purple sprouting broccoli, chopped
  • 2 skinless chicken breast fillets
  • 140g of basmati rice
  • 2 tsp ginger, finely grated
  • 1 tbsp honey
  • 2 tbsp light soy sauce
  • 1 clove of garlic, finely chopped
  • 1 tsp ground coriander

Method

  1. Preheat the oven. Mix the ginger, honey, ground coriander, soy sauce, garlic, lime juice and zest in a bowl, add the chicken and mix thoroughly.
  2. Transfer to a baking dish lined with foil and bake in the oven for 20 minutes, or until cooked through.
  3. Meanwhile, cook the rice according to the packet instructions. Shortly before the rice and chicken are finished cook the broccoli in a pan of lightly salted boiling water for 3-4 minutes, or until tender.
  4. Serve the zesty ginger chicken with the cooked basmati rice and purple sprouting broccoli.
