Chorizo & Paprika Penne

Penne pasta with a hearty chorizo, red pepper and tomato sauce.


  • 1 small red pepper (140g), finely chopped
  • 50g of chorizo, diced
  • 2 medium tomatoes (approx 100g each), finely chopped
  • 90g of penne pasta quills
  • 2 tbsp Parmesan cheese, grated
  • 1 tsp paprika
  • 1 garlic clove, finely chopped
  • 1/2 tsp dried oregano
  • 1 tbsp olive oil

  1. Cook the pasta according to the packet instructions.
  2. Meanwhile, heat the olive oil in a frying pan and gently cook the garlic for 1 minute over a low heat. Add the pepper, turn up the heat and fry for 5-6 minutes, or until tender. Stir in the chorizo, tomato, paprika and oregano and cook for 2-3 minutes, or until the tomato begins to break down and the sauce develops a thicker consistency.
  3. Drain the pasta and toss with the sauce. Season to taste with salt and pepper and serve immediately topped with the Parmesan cheese.
