Tuna Nicoise Salad

A French salad with tuna steaks, green beans, boiled eggs and new potatoes.


  • 1/2 cos lettuce, shredded
  • 100g of cherry tomatoes, halved
  • 80g of fine trimmed green beans
  • 4 medium new potatoes (approx 70g each), quartered
  • 2 tuna steaks
  • 2 eggs, washed under cold water
  • 2 tbsp olive oil
  • 2 tsp white wine vinegar
  • 2 tsp lemon juice

  1. Preheat the grill. Cook the potatoes and eggs in lightly salted boiling water for 8-10 minutes. Drain the potatoes and set aside. Run the eggs under cold water until cool. Shell the eggs, cut into 1cm pieces and set aside.
  2. In a separate saucepan, cook the green beans in lightly salted boiling water for 3-4 minutes, or until cooked.
  3. Meanwhile, place the tuna steaks on a baking tray, season with salt and pepper and grill for 2-3 minutes on each side, or until cooked to your liking. Let the tuna cool and then flake into large pieces.
  4. To make the dressing, mix together the oil, vinegar and lemon juice. Season with salt and pepper.
  5. Toss together the salad leaves, cherry tomatoes, flaked tuna, potatoes, eggs and green beans with the dressing and serve immediately.
