Singapore-style Noodles

Spicy stir-fried rice noodles with prawns, bacon and red pepper seasoned with curry powder and crushed chillies.


  • 1 small onion (approx 110g), coarsely chopped
  • 200g of smoked bacon lardons
  • 1 medium red pepper (155g), thinly sliced
  • 200g of cooked and peeled prawns
  • 1 bunch of spring onions, thinly sliced
  • 3 x 150g straight to wok rice noodles
  • 1 tbsp medium curry powder
  • 2 tbsp light soy sauce
  • 1 clove of garlic, finely chopped
  • 1 tbsp vegetable oil
  • 1/2 tsp crushed chillies, finely chopped

  1. Heat the oil in a wok or frying pan and fry the bacon lardons for 4-5 minutes, or until cooked. Add the onion, spring onion and garlic and fry for 2-3 minutes. Add the red pepper and cook for 2-3 minutes. Add the curry powder and crushed chillies and fry for 1 minute.
  2. Stir in the prawns and cook until heated through. Mix in the noodles and soy sauce and cook for 1-2 minutes. Add extra soy sauce to taste and serve immediately.
