Easy Paella

An easy version of this Spanish classic with chicken, chorizo, prawns, rice and peas.


  • 100g of chorizo, sliced
  • 1 medium onion (approx 185g)
  • 200g of cooked and peeled king prawns
  • 2 skinless chicken breast fillets

  • 240g of long grain rice
  • 100g of frozen peas
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1.2 litres of chicken stock, prepared according to the packet instruction

  1. Heat 1 tbsp olive oil in a large saucepan and fry the chicken over a medium heat for 5-6 minutes, or until browned. Remove from the pan and set aside.
  2. Add 1 tbsp olive oil to the pan, if necessary, and fry the onion, garlic and chorizo for 2-3 minutes, or until the onion is soft. Add the paprika and fry for 1 minute.
  3. Return the chicken to the pan and stir in the rice and stock. Bring to the boil, then cover and simmer for 15 minutes, or until the rice is cooked. Top up with extra water if necessary.
