Spaghetti Bolognese

Classic Italian tomato meat sauce served with spaghetti and Parmesan cheese.

Ingredients

  • 500g of minced beef
  • 800g of tinned chopped tomatoes
  • 1 medium onion (approx 185g), finely chopped
  • 1 large tomato (approx 115g), chopped
  • 375g of spaghetti
  • 40g of Parmesan cheese, grated
  • 150ml of red wine
  • 2 cloves of garlic, finely chopped
  • 2 tbsp tomato puree
  • 1 tbsp dried oregano
  • 2 tbsp olive oil
  • 1 bay leaf
  • 500ml beef stock, prepared according to the packet instructions

Method

  1. Heat 1 tbsp olive oil in a large saucepan and fry the beef mince for 4-5 minutes, or until browned. Remove from the pan and set aside.
  2. In the same pan, heat 1 tbsp of oil and cook the onion and garlic over a low heat for 4-5 minutes, or until soft.
  3. Return the browned mince to the pan and stir in the tomato puree, tinned tomatoes, chopped tomato, oregano, bay leaf, red wine and beef stock. Bring to the boil then simmer, covered, for 50 minutes. Add a little water if the bolognese becomes dry.
  4. Towards the end of the bolognese cooking time cook the spaghetti according to the packet instructions.
  5. Season the bolognese to taste with salt and pepper and serve with the spaghetti and Parmesan cheese.
