Tuna & Sweetcorn Mayo with Fried Potatoes

  • 3 medium new potatoes (approx 70g each), quartered
  • half a 185g tin of tuna chunks, drained
  • half a 198g tin of sweetcorn, drained
  • 1 tsp margarine/butter
  • 2 tbsp mayonnaise
  • 2 tbsp vegetable oil

  1. Parboil the potatoes in lightly salted boiling water for 6-8 minutes, or until almost cooked through. Drain well.
  2. Meanwhile, mix the tuna, sweetcorn and mayonnaise in a bowl. Season with salt and pepper.
  3. Heat the oil and margarine/butter in a frying pan and fry the potatoes for 4-5 minutes, or until tender. Drain on a paper towel. Season with salt and pepper.
  4. Serve the potatoes on a plate topped with the tuna and sweetcorn mayonnaise.
