Creamy Bacon & Pea Linguine

Linguine pasta tossed in a creamy bacon and pea sauce and served topped with Parmesan cheese.

Ingredients

  • 400ml of double cream
  • 500g of value smoked back bacon, chopped
  • 500g of linguine pasta
  • 100g of fresh ready grated Parmesan cheese
  • 200g of frozen peas
  • 2 cloves of garlic, finely chopped
  • 1 tbsp lemon juice
  • 2 tbsp vegetable oil

Method

  1. Cook the pasta according to the packet instructions.
  2. Meanwhile, heat the oil in a large frying pan and fry the bacon for 5-6 minutes, or until crispy. Add the garlic and fry for 1 minute. Add the cream and peas and simmer for 3-4 minutes. Stir in the lemon juice and season to taste with salt and pepper.
  3. Drain the pasta and toss with the creamy bacon and pea sauce and serve immediately topped with the Parmesan cheese.
