Beef Stroganoff

Beef in a creamy mushroom sauce spiced with paprika and chilli powder.

Ingredients

  • 125g rump steak, cut into 1cm strips
  • 3 closed cup mushrooms, sliced
  • 2/3 small onion, chopped
  • 75ml of double cream
  • 60g of long grain rice
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp medium curry powder
  • 1 tsp mild chilli powder
  • 1 tsp plain white flour
  • 1 garlic clove, finely chopped
  • 2 tsp tomato puree
  • 100ml beef stock, prepared according to the packet instructions

Method

  1. Cook the rice according to the packet instructions.
  2. Meanwhile, heat the oil in a saucepan and cook the onion and garlic for 2-3 minutes, or until the onion is soft. Stir in the chilli powder, paprika and curry powder and fry for 1 minute to intensify the flavours. Sprinkle the flour over the mushrooms and steak, add to the pan and fry for 3-4 minutes.
  3. Stir in the tomato purée and stock and simmer for 4-5 minutes, or until the sauce develops a thicker consistency.
  4. Stir in the cream and heat through. Season to taste with salt and pepper.
  5. To serve, simply spoon the beef stroganoff over the cooked rice.
