Beef Stroganoff

Beef in a creamy mushroom sauce spiced with paprika and chilli powder.
Ingredients
- 125g rump steak, cut into 1cm strips
- 3 closed cup mushrooms, sliced
- 2/3 small onion, chopped
- 75ml of double cream
- 60g of long grain rice
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp medium curry powder
- 1 tsp mild chilli powder
- 1 tsp plain white flour
- 1 garlic clove, finely chopped
- 2 tsp tomato puree
- 100ml beef stock, prepared according to the packet instructions

Method
- Cook the rice according to the packet instructions.
- Meanwhile, heat the oil in a saucepan and cook the onion and garlic for 2-3 minutes, or until the onion is soft. Stir in the chilli powder, paprika and curry powder and fry for 1 minute to intensify the flavours. Sprinkle the flour over the mushrooms and steak, add to the pan and fry for 3-4 minutes.
- Stir in the tomato purée and stock and simmer for 4-5 minutes, or until the sauce develops a thicker consistency.
- Stir in the cream and heat through. Season to taste with salt and pepper.
- To serve, simply spoon the beef stroganoff over the cooked rice.
