Spaghetti Carbonara

Italian-style carbonara with gammon, mushrooms and Parmesan cheese.


  • 1/2 smoked gammon steak, thickly sliced
  • 2 closed cup mushrooms, thinly sliced
  • 1 medium egg, beaten
  • 90g of spaghetti
  • 1 x small garlic clove, finely chopped
  • 1 tsp vegetable oil
  • 1 tsp grated Parmesan

  1. Mix the beaten egg and 2 tsp of the Parmesan cheese in a large bowl to make the carbonara sauce. Season with salt and pepper.
  2. Cook the spaghetti according to the packet instructions.
  3. While the spaghetti is cooking, heat the oil in a frying pan and fry the gammon for 3 minutes. Add the garlic and mushroom and cook for 3-4 minutes, or until the mushrooms are soft.
  4. Drain the spaghetti, reserving 1 tbsp of the cooking water. Immediately add the drained pasta to the carbonara sauce along with the reserved cooking water, gammon and mushrooms. Toss together using two forks. (The egg will be cooked by the heat of the pasta.) Top with the remaining Parmesan and serve immediately.
