Vegetable Tagine with Couscous

A simple and flavourful spiced tagine with aubergine, courgette and red pepper.

Ingredients

  • 1/2 courgette, diced
  • 1/2 aubergine, diced
  • 1/2 red pepper, diced
  • 75g of couscous
  • 1 tbsp vegetable oil
  • 1 garlic clove, finely chopped
  • 150ml vegetable stock, prepared according to the packet instructions
  • 1 tsp mixed spices
  • 1/2 tsp mild chilli powder

Method

  1. Heat the oil in a saucepan and fry the aubergine for 4-5 minutes, or until slightly browned. Add the courgette, red pepper and garlic and fry for 2-3 minutes. Add the chilli powder and mixed spices and fry for 1 minute.
  2. Pour in the stock, season with salt and pepper and simmer for 10 minutes. Top up with a little extra stock if required.
  3. Meanwhile, prepare the couscous according to the packet instructions and season to taste.
  4. To serve, simply spoon the vegetable tagine over the cooked couscous.
