Sweet & Sour Pork

A surprisingly simple pork dish served with a delicious home-made sweet and sour sauce.

  • 150g belly pork, cut into 2 cm pieces
  • 60g of value long grain rice
  • 2 tsp light soy sauce
  • 4 tbsp tomato ketchup
  • 2 tbsp white caster sugar
  • 21/2 tbsp vinegar

Method

  1. Preheat the oven. To make the sauce, mix together the soy sauce, ketchup, vinegar and sugar.
  2. Mix the pork and two-thirds of the sauce in a small ovenproof dish. Cover with foil and bake for 45 minutes, basting and turning the pork occasionally.
  3. Once the pork has been in the oven for 45 minutes, remove the foil and continue to bake until the sauce thickens and develops a sticky consistency.
  4. Meanwhile, cook the rice according to the packet instructions to be ready at the same time as the pork.
  5. Mix the cooked sweet and sour pork with the remaining sauce and serve immediately on a bed of cooked rice.
