Easy Chicken Couscous

Couscous with chickpeas, courgette cherry tomatoes and pre-cooked chicken, making for a quick and easy dinner.


  • 220g of sliced cooked chicken
  • 400g of tinned chickpeas, drained and rinsed
  • 1 small red onion (approx 110g), finely chopped
  • 1 medium courgette (approx 240g), thinly sliced
  • 300g of cherry tomatoes, halved
  • 300g of couscous
  • 1 tbsp vegetable oil
  • 300ml vegetable stock, prepared according to the packet instructions
  • 2 tsp dried mixed herbs
  • 1 tbsp lemon juice

  1. Heat the oil in a frying pan and fry the onion and courgette for 4-5 minutes. Add the tomatoes and cook for 3-4 minutes. Then stir in the chicken and chickpeas and cook for 3-4 minutes, or until heated through.
  2. Meanwhile, prepare the couscous according to the packet instructions using the stock instead of water. Stir in the mixed herbs and lemon juice and season to taste with salt and pepper.
  3. Serve the chicken and vegetables on a bed of couscous.
