Vegetable Chow Mein

Quick chow mein-style stir-fry with pepper, courgette, carrot and noodles.


  • 1 medium red onion (approx 185g), chopped
  • 1 yellow and 1 green pepper, finely sliced
  • 1 small carrot (approx 95g), thinly sliced
  • 1 small courgette (approx 165g), thinly sliced
  • 150g of medium dried egg noodles
  • 2 tbsp vegetable oil
  • 1 tsp fresh ginger, chopped
  • 2 tsp light soy sauce
  • 100ml vegetable stock, prepared according to the packet instructions
  • 1 tsp vegetarian gravy granules

  1. Heat the oil in a frying pan or wok and cook the onion over a high heat for 1-2 minutes. Add the carrot, pepper, courgette and ginger and cook for 2 minutes, or until the vegetables are tender but retain a slight bite.
  2. Meanwhile, cook the noodles according to the packet instructions.
  3. Remove the vegetables from the pan. Stir together the stock, soy sauce and gravy granules. Pour into the pan and simmer until reduced to a thickened consistency. Add the noodles and vegetables to the pan and mix together. Season to taste with salt and pepper.
  4. Add extra soy sauce to taste and serve immediately.
