Hawaiian Chicken Skewers

Delectable Hawaiian-style chicken and pineapple kebabs with a garlic and herb marinade. Served with a spicy tomato dip and rice.

Ingredients

  • 2 x pineapple slices, each cut into sixths
  • 1 skinless chicken breast fillet, cut into 2cm pieces
  • 1/3 small onion, cut in chunks
  • 1 medium tomato (approx 100g)
  • 60g of long grain rice
  • 1 small garlic clove, finely chopped
  • 1 1/4 tsp Worcestershire sauce
  • 1 tbsp margarine/butter
  • 1/4 tsp dried mixed herbs
  • 2 tbsp tomato ketchup
  • 1/4 tsp mild chilli powder
  • 1/4 tsp paprika

Method

  1. For the tomato dip, score a cross into the skin of the tomato at the tip and drop into a pan of boiling water for 30 seconds. Remove from the pan and run under cold water until cool. Peel off the skin (starting at the scored cross), cut in half and deseed.
  2. Finely chop the peeled and deseeded tomato and add the tomato ketchup, paprika, chilli powder, 1/2 the garlic and 1 tsp Worcestershire sauce. Season with salt and pepper, mix well and set aside.
  3. Melt the margarine/butter in a small saucepan. Stir in the dried mixed herbs and the remaining Worcestershire sauce and garlic.
  4. Preheat the grill to high. Thread the chicken, pineapple and onion onto the skewers, alternating the ingredients. Place in a deep baking tray and spoon on the marinade, making sure everything is well coated. Season with salt and pepper. Grill, turning frequently, for 15 minutes, or until cooked.
  5. Meanwhile, cook the rice according to the packet instructions.
  6. Serve the kebab over the cooked rice and spoon on the spicy tomato salsa.

Cook's tips

If using wooden skewers, soak them in cold water before use to stop them from burning. Remember to always keep an eye on them while grilling. If you do not have skewers, these kebabs can be made loose in a deep baking tray.
