Peri Peri Chicken with Chips

  • 600g of frozen oven chips
  • 200g of frozen peas
  • 90ml of peri peri sauce
  • 60g of tomato ketchup

  1. Preheat the oven and grill. Cook the chips according to the packet instructions.
  2. Butterfly the chicken breasts by slicing each lengthways across the middle but not all the way through. Open up the breasts and lay them flat on a baking tray. Thoroughly coat the chicken breasts with 60ml of peri peri sauce. Season with salt and pepper. Grill for 10 minutes, or until cooked through.
  3. Meanwhile, make a mild peri peri dipping sauce by mixing the ketchup with 30ml peri peri sauce.
  4. When the chicken and chips are nearly cooked, cook the peas according to the packet instructions.
  5. Serve the peri-peri chicken with the cooked chips, dipping sauce and peas.
