Peri Peri Chicken with Chips

Chicken in a spicy chilli sauce served with chips and peas.
Ingredients
- 4 skinless chicken breast fillets
- 600g of frozen oven chips
- 200g of frozen peas
- 90ml of peri peri sauce
- 60g of tomato ketchup

Method
- Preheat the oven and grill. Cook the chips according to the packet instructions.
- Butterfly the chicken breasts by slicing each lengthways across the middle but not all the way through. Open up the breasts and lay them flat on a baking tray. Thoroughly coat the chicken breasts with 60ml of peri peri sauce. Season with salt and pepper. Grill for 10 minutes, or until cooked through.
- Meanwhile, make a mild peri peri dipping sauce by mixing the ketchup with 30ml peri peri sauce.
- When the chicken and chips are nearly cooked, cook the peas according to the packet instructions.
- Serve the peri-peri chicken with the cooked chips, dipping sauce and peas.
