Chicken Pesto Pasta

Quick-and-easy pasta tossed with green pesto, chicken and Parmesan cheese.
Ingredients
- 1 skinless chicken breast fillet, cut into 2cm pieces
- 2 tbsp pesto
- 1 tbsp Parmesan cheese, grated
- 90g of penne pasta quills
- 1 small garlic clove, finely chopped
- 1 tbsp olive oil

Method
- Cook the pasta according to the packet instructions.
- Meanwhile, heat the oil in a frying pan and fry the chicken and garlic over a medium heat for 5-6 minutes, or until the chicken is cooked.
- Toss together the pasta, pesto, chicken and half the Parmesan. Season to taste with salt and pepper. Sprinkle on the remaining Parmesan cheese and serve immediately.
