Warm Jersey Royal Salad with Sausages

Sausages served with a salad of Jersey Royal potatoes and spring onions tossed with a mustard dressing.


  • 800g of seasonal new potatoes (like Jersey Royals)
  • 12 premium pork sausages
  • 1 bunch of spring onions, chopped
  • 2 tbsp red wine vinegar
  • 165ml (11 tbsp) olive oil
  • 1 tsp wholegrain mustard
  • 1 tbsp fresh parsley, chopped (optional)
  • 60ml chicken stock
  • 2 tsp honey

  1. Cook the new potatoes in lightly salted boiling water for 10-12 minutes, or until tender.
  2. Meanwhile, heat 1 tbsp olive oil in a frying pan and fry the sausages, turning occasionally, for 10-12 minutes, or until cooked through. Once cooked through set aside.
  3. While the potatoes and sausages are cooking, prepare the dressing by mixing the vinegar, mustard, honey and 10 tbsp olive oil.
  4. When the potatoes are cooked, drain and place them into a mixing bowl. With a spoon, gently press them to break the skins, so that when the dressing is added they will soak up the flavours.
  5. Heat the chicken stock and mix with the dressing mix, add the spring onions and fresh herbs. Season with salt and pepper to taste. Then mix gently into the lightly crushed potatoes and serve with the sausages.
