Vegetable Hotpot

The perfect winter warmer - a spiced mix of vegetables baked in the oven.


  • 1/3 small aubergine, diced
  • 1/3 small onion (approx 110g each), finely chopped
  • 1/2 medium green pepper (155g), chopped
  • half a 227g tin chopped tomatoes
  • 1 medium new potato (approx 70g), peeled and diced
  • 1 garlic clove, finely chopped
  • 1 tbsp vegetable oil
  • 100ml vegetable stock
  • 1/2 tsp mixed spices
  • 1/2 tsp mild chilli powder

  1. Preheat the oven. Heat the oil in a saucepan and cook the onion and garlic for 2-3 minutes or until the onion is soft. Cook the aubergine for 4-5 minutes or until slightly browned.
  2. Add the potato, pepper, chopped tomatoes, mixed spices, chilli powder and stock. Simmer for 10 minutes, stirring constantly. Season with salt and pepper.
  3. Transfer to an ovenproof dish, cover with foil and bake for 30-40 minutes or until the vegetables are cooked and tender. Serve immediately.
