Harissa Turkey Burgers

Harissa turkey burgers in toasted ciabatta rolls with a green salad and a tomato and chilli salsa.


  • 1 lime, zested and juiced
  • 2 small tomatoes (approx 75g each), chopped
  • 2 ciabatta rolls, halved
  • 70g of mixed salad leaves
  • 1 small red onion (approx 110g), finely chopped
  • 250g of turkey mince
  • half a bunch of spring onions, finely sliced
  • 1 tsp sundried tomato paste
  • 1 tbsp fresh parsley, chopped
  • 4 tbsp olive oil
  • 1 clove of garlic, crushed
  • 1 tbsp tomato puree
  • 1/2 tsp tabasco sauce
  • 1 fresh green chilli, deseeded and finely chopped
  • 2 tsp white wine vinegar
  • 1/2 tsp ground cumin

  1. Preheat the grill. Mix together the turkey mince, garlic, cumin, tomato puree, Tabasco sauce, lime zest, and spring onions in a bowl and season generously with salt and pepper.
  2. Divide the mixture into four and shape into patties. Brush the patties with 1 tbsp olive oil and grill for 10-15 minutes, turning once halfway through, or until cooked through.
  3. Meanwhile, to make the salsa, mix together the tomatoes, red onion, chilli, sundried tomato paste, parsley, lime juice and 1 tbsp olive oil. Season to taste with salt and pepper and set aside.
  4. To make the dressing, mix the white wine vinegar with 2 tbsp olive oil. Season with salt and pepper and toss with the salad leaves.
  5. Toast the ciabatta rolls under the grill and fill with the patties and some salad leaves and salsa. Serve the burgers with the remaining salad leaves and tomato and chilli salsa.
