Chicken & Chorizo Stew

Satisfy your appetite with this hearty Spanish-inspired stew with chicken, chorizo and butter beans.


  • 1/2 small red onion, finely chopped
  • 1/2 small red pepper, roughly chopped
  • 1 skinless chicken breast fillet, cut into 2cm pieces
  • 30g of chorizo, diced
  • half a 227g tin of chopped tomatoes
  • half a 220g tin of butter beans
  • 1 medium new potato (approx 70g), diced
  • 1 tsp olive oil
  • 1 x small garlic clove, finely chopped
  • 1/4 tsp chilli powder
  • 1 tsp tomato puree
  • 150ml chicken stock, prepared according to the packet instructions
  • 1/4 tsp dried thyme

  1. Heat the oil in a saucepan and cook the chicken for 4-5 minutes, or until browned, then put to one side. Add the onion, garlic, red pepper and chilli powder and fry for 5 minutes, or until tender.
  2. Stir in the chorizo, chicken, chopped tomatoes, butter beans, tomato puree, stock, potato and dried thyme and simmer for 15 minutes, or until the stew develops a thicker consistency. Season to taste with salt and pepper and serve immediately.
