Eton Berry Mess

An easy to prepare dessert of whipped cream, crushed meringue, strawberries and raspberries.


  • 1 punnet of raspberries (approx 200g)
  • 600ml of double cream
  • 400g of strawberries, hulled and halved
  • 8 meringue nests, lightly crushed
  • white caster sugar, to taste

  1. Whip the cream until it forms soft peaks and fold in the crushed meringue and three quarters of the raspberries and strawberries. Taste and add a little sugar if necessary to sweeten.
  2. Serve immediately in glasses or bowls and garnish with the remaining strawberries and raspberries.

Cook's tips

If you want to make the dessert in advance, leave the meringues separate and add at the last minute so that they stay crisp.
