Harissa Turkey Burgers

Harissa turkey burgers in toasted ciabatta rolls with a green salad and a tomato and chilli salsa.


  • 1 bunch of spring onions, finely sliced
  • 2 limes, zested and juiced
  • 140g of mixed salad leaves
  • 4 ciabatta rolls, halved
  • 500g of turkey mince
  • 3 medium tomatoes (approx 100g each), chopped
  • 1 large red onion (approx 210g), finely chopped
  • 2 tsp sundried tomato paste
  • 105ml of olive oil (7 tbsp)
  • 2 tbsp fresh parsley, chopped
  • 2 cloves of garlic, crushed
  • 2 tbsp tomato puree
  • 1 tsp tabasco sauce
  • 2 fresh green chillies, deseeded and finely chopped
  • 1 tbsp white wine vinegar
  • 1 tsp ground cumin

  1. Preheat the grill. Mix together the turkey mince, garlic, cumin, tomato purée, Tabasco sauce, lime zest, and spring onion in a bowl and season generously with salt and pepper.
  2. Divide the mixture into four and shape into patties. Brush the patties with 2 tbsp olive oil and grill for 10-15 minutes, turning once halfway through, or until cooked through.
  3. Meanwhile, to make the salsa, mix together the tomatoes, red onion, chilli, sundried tomato paste, parsley, lime juice and 2 tbsp olive oil. Season to taste with salt and pepper and set aside.
  4. To make the dressing, mix the white wine vinegar with 3 tbsp olive oil. Season with salt and pepper and toss with the salad leaves.
  5. Toast the ciabatta rolls under the grill and fill with the patties and some salad leaves and salsa. Serve the burgers with the remaining salad leaves and tomato and chilli salsa.
