Smoked Salmon Frittata

An Italian omelette with smoked salmon, cheddar cheese and potato.


  • 50g smoked salmon, cut into strips
  • 2 medium new potatoes (approx 70g each), halved lengthways and thinly sliced
  • 30g of cheddar cheese, grated
  • half a bunch of spring onions, chopped
  • 2 free range medium eggs
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • 3 tbsp milk

  1. Cook the potatoes in lightly salted boiling water for 6 minutes, or until tender.
  2. Meanwhile, beat together the eggs, milk and cheese. Season generously with salt and pepper and set aside.
  3. Preheat the grill to high. Heat the oil in a frying pan and cook the spring onion for 2-3 minutes, or until soft. Stir in the salmon and potatoes and heat for 1 minute. Pour in the beaten egg mixture, making sure all the ingredients are coated. Stir the egg mixture to break it up a little as it begins to cook. Fry for 2-3 minutes over a medium heat, or until the edge of the frittata begins to set.
  4. Place the frittata pan under the grill for 4-5 minutes, or until the egg is cooked and the top is a golden colour. Drizzle on the lemon juice and serve immediately.
