Spaghetti & Bacon Bake

Spaghetti tossed in a tomato and bacon sauce, layered with mozzarella and Parmesan cheese and baked in the oven until golden.

Ingredients

  • 250g of smoked streaky bacon, chopped
  • two-thirds 185g tin of black olives, coarsely chopped
  • 2 mozzarella balls, sliced
  • 800g of tinned chopped tomatoes
  • 1 medium onion (approx 185g), finely chopped
  • 50g of Parmesan cheese, grated
  • 360g of spaghetti, snapped in half
  • 1 tbsp olive oil
  • 1 large clove of garlic, finely chopped
  • 1 tsp dried mixed herbs
  • 2 tsp mild chilli powder
  • 1 tsp dried oregano

Method

  1. Preheat the oven. Heat the oil in a frying pan and fry the onion and garlic for 3-4 minutes, or until the onion is soft. Add the bacon and fry for 3-4 minutes, or until crispy. Add the chilli powder and fry for 1 minute. Stir in the chopped tomatoes, olives, oregano and mixed herbs and cook for 10 minutes, or until the sauce develops a thicker consistency. Season with salt and pepper.
  2. Meanwhile, cook the spaghetti according to the packet instructions
  3. Toss the spaghetti with the tomato and bacon sauce and spoon half into an ovenproof dish. Spread on half the mozzarella and spoon in the remaining spaghetti mixture. Finish with another layer of mozzarella and sprinkle on the Parmesan cheese. Bake for 15-20 minutes, or until the cheese on top is melted and golden.
