Cheat's Chicken Satay

Chicken in a satay-inspired peanut sauce served with rice.


  • 1 skinless chicken breast fillet, cut into strips
  • half a bunch of spring onions, chopped
  • 60g of long grain rice
  • 1 1/2 tbsp crunchy peanut butter
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • 2 tsp light soy sauce
  • 1/2 tsp mild chilli powder
  • 1/2 tsp brown sugar

  1. Cook the rice according to the packet instructions.
  2. Meanwhile, heat the oil in a frying pan and fry the spring onions for 2-3 minutes, or until soft. Add the chicken and fry for 5-6 minutes, or until cooked and lightly browned.
  3. Add the chilli powder to the pan and fry for 30 seconds. Add the soy sauce, peanut butter, brown sugar, lemon juice and 4 tbsp water and simmer for 2-3 minutes. It the sauce is too dry, add a little extra water.
  4. To serve simply spoon the satay chicken onto a bed of cooked rice.
