Vegetable & Tofu Skewers with Garlic Yogurt

Spicy vegetable and tofu skewers served with garlic yogurt and rice.


  • 198g tofu, drained and cut into 2cm cubes
  • 1/3 small onion, cut into chunks
  • 1/3 aubergine, cut into 2cm cubes
  • 75g of natural yogurt
  • 1/3 small courgette, cut into 2cm cubes
  • 60g of long grain rice
  • 2 tbsp olive oil
  • 1/2 tsp mild chilli powder
  • 1/2 tsp tomato puree
  • 1 garlic clove, finely chopped
  • 1/2 tsp ground coriander
  • 1 tsp lemon juice
  • 1/2 tsp fresh ginger, grated

  1. In a large bowl, mix together the garlic, coriander, chilli powder, ginger, tomato puree, lemon juice and olive oil. Add the aubergine, courgette, onion and tofu. Season with salt and pepper. Mix to coat thoroughly and set aside to marinate for up to an hour or as long as possible.
  2. Preheat the grill to high. Thread the tofu, aubergine, courgette and onion onto the skewers, alternating the ingredients. Place in a deep baking tray and cook under the grill for 15 minutes, turning frequently, or until fully cooked.
  3. Meanwhile, cook the rice according to the packet instructions.
  4. To make the dip, combine the remaining garlic and yogurt in a bowl and season with salt and pepper.
  5. Serve the grilled kebabs with the garlic dip and rice.

Cook's tips

If using wooden skewers, soak them in cold water before use to stop them from burning. Remember to always keep an eye on them while grilling. If you do not have skewers, these kebabs can be made loose in a deep baking tray.
