Barbeque Pork

Bring the taste of summer indoors with this grilled pork chop in a home-made barbecue sauce.


  • 1 small baking potato, cut into wedges
  • 1 pork chop
  • 1/2 small garlic clove, finely chopped
  • 1/2 tsp English mustard
  • 2 tbsp tomato ketchup
  • 4 tsp honey
  • 1/2 tsp mild chilli powder
  • 1 tbsp olive oil
  • 1/4 tsp white wine vinegar

  1. To make the barbecue sauce, mix the ketchup, garlic, mustard, honey, vinegar, and chilli powder in a bowl. Season with salt and pepper. Spoon half the sauce over the pork and leave to absorb the flavour. Set aside the remaining sauce.
  2. Parboil the potato wedges in lightly salted boiling water for 5-6 minutes. Drain well and transfer to an ovenproof dish, drizzle with the oil, season with salt and pepper and bake for 15-20 minutes, or until cooked through and crispy. Turn the potatoes half way through the cooking time.
  3. Meanwhile, preheat the grill to high and place the pork chop on a baking tray. Cook for 8-9 minutes, turning halfway through and basting as required, or until fully cooked.
  4. Serve the BBQ pork with the potato wedges and the remaining barbeque sauce for dipping.

Make the marinade ahead of time to allow the pork to absorb all the flavours.
