Pork with a Mustard Leek Sauce

Grilled pork chops with mashed potato, green beans and a creamy leek and mustard sauce.

Ingredients

  • 200g of fine trimmed green beans
  • 1 small leek (approx 210g), thinly sliced
  • 4 medium baking potatoes (approx 320g each), peeled and diced
  • 150ml of double cream
  • 4 value pork chops
  • 1 garlic clove, finely chopped
  • 4 tbsp vegetable oil
  • 4 tsp English mustard
  • 4 tsp margarine/butter
  • 2 tbsp milk
  • 150ml vegetable stock

Method

  1. Preheat the oven. Cook the potato in lightly salted boiling water for 10 minutes, or until tender.
  2. Meanwhile, heat 2 tbsp oil in a pan and fry the pork chops for 2-3 minutes on each side, or until browned.
  3. Place the pork chops on a baking tray and season well with salt and pepper. Cook in the oven for 6-8 minutes, or until cooked through.
  4. Meanwhile, to prepare the sauce heat 2 tbsp oil in a saucepan and cook the leek and garlic for 6-7 minutes, stirring regularly, or until the leek is tender. Pour in the stock and the double cream and stir in 1 tsp mustard. Bring to a gentle boil and cook, stirring constantly for 2-3 minutes, or until the stock and cream reduce and the sauce develops a thicker consistency. Season with salt and pepper.
  5. Meanwhile, cook the green beans in boiling water for 3-4 minutes, or until tender. Drain and season with salt and pepper.
  6. To make the mash, drain the cooked potato and mash with the milk, margarine/butter and 3 tsp mustard, until smooth and creamy. Season to taste with salt and pepper.
  7. Serve the pork chops on plates with the mashed potato, green beans and the leek and mustard sauce.
