Cider Braised Chicken with Creamy Mash

Chicken legs, parsnips, carrots and leeks braised in cider and served with creamy mashed potatoes.

Ingredients

  • 2 medium parsnips (approx 285g each), peeled and cut into 2cm pieces
  • 3 medium baking potatoes (approx 320g each), peeled and cut into 2cm pieces
  • 1 large onion (approx 210g), coarsely chopped
  • 2 medium carrots (approx 125g each), peeled and cut into 2cm pieces
  • 1 large leek (approx 310g), thickly sliced
  • 500ml of apple cider
  • 4 chicken legs
  • 4 tbsp milk
  • 2 tbsp margarine/butter
  • 3 tbsp vegetable oil
  • 150ml vegetable stock, prepared according to the packet instructions
  • 1 clove of garlic, finely chopped

Method

  1. Preheat the oven. Season the chicken legs generously with salt and pepper. Heat 2 tbsp oil over a high heat in a large saucepan and fry the legs for 2-3 minutes on each side, or until browned. Remove from the pan and set aside.
  2. Add 1 tbsp oil to the pan (if necessary) and fry the onion and garlic over a medium heat for 3-4 minutes, or until soft. Add the leek, carrot and parsnip and fry for 5 minutes, or until the leek is soft.
  3. Pour in the cider and stock, bring to the boil, and simmer for 5 minutes. Season with salt and pepper and transfer to an ovenproof dish. Add the chicken legs, cover and roast in the oven for 60 minutes.
  4. After the chicken has been in the oven for 45 minutes, cook the potatoes in lightly salted boiling water for 10 minutes, or until tender. Drain and mash with the butter/margarine and milk until creamy. Season to taste with salt and pepper.
  5. Remove the cider braised chicken and vegetables from the oven and serve with the mashed potato.
