Sweet Chilli Salmon Noodles
This recipe works in combination with: Roasted Red Pepper Salad with Mozzarella, Salmon & Grilled Pepper Salad, Salmon & New Potato Salad, Tomato & Mozzarella Salad.
Salmon with a sweet chilli and ginger sauce served with yellow pepper and noodles.
Ingredients
- 1/3 small red onion, sliced
- 1/3 yellow pepper, very finely sliced
- 1 salmon fillet, cut into pieces
- 50g of medium dried egg noodles
- 2 tsp lemon juice
- 1 tsp vegetable oil
- 2 tbsp light soy sauce
- 1 tbsp white caster sugar
- 1 tsp mild chilli powder
- 2 tsp tomato puree
- 2 tsp fresh ginger

Method
- Mix together the ginger, soy sauce, lemon juice, sugar, chilli powder and tomato puree. Place the salmon in the marinade and set aside until needed.
- Cook the noodles according to the packet instructions. Drain and set aside.
- Meanwhile, heat the oil in a large frying pan or wok and cook the onion for 2-3 minutes, or until soft. Add the salmon and marinade and fry for 3-4 minutes, or until cooked through. Remove the frying pan or wok from the heat and toss in the yellow pepper and cooked noodles. Allow to cool.
