Pan-cooked Pizza with Oven Chips

Quick and easy pizza cooked in a frying pan and topped with tomato, mushroom, and mozzarella. Served with oven chips.

Ingredients

  • 50g of cheddar cheese, grated
  • half a value mozzarella ball, sliced
  • 2 medium tomatoes (approx 100g each), sliced
  • 4 closed cup mushrooms, sliced
  • 5 tbsp vegetable oil
  • 300g of frozen oven chips
  • 160g of plain white flour
  • 1 tbsp tomato puree
  • 1 small garlic clove, finely chopped
  • 1/2 tbsp dried mixed herbs
  • 2 tsp baking powder

Method

  1. Preheat the oven and grill. To make the pizza dough, mix the flour, baking powder and a pinch of salt in a mixing bowl. Add 2 tbsp oil and 4 tbsp water, a little at a time, until you have a soft dough. Knead the dough on a floured surface for 1-2 minutes. Roll out to the size of a large frying pan.
  2. Oven-bake the chips according to the packet instructions.
  3. Meanwhile, heat 1 tbsp oil in a large frying pan and add the pizza base. Cook for 3 minutes, or until golden brown underneath. Flip onto the other side and cook for 3 minutes. Remove from the heat and set aside.
  4. Meanwhile, heat 1 tbsp oil in a separate frying pan and cook the mushrooms for 3-4 minutes, or until tender. Add the garlic and fry for 1 minute.
  5. Spread the tomato purée onto the pizza base and arrange the tomato and mushroom slices on top. Top with the mozzarella, cheddar cheese and mixed herbs. Grill for 5 minutes, or until the cheese is melted and golden brown.
  6. Serve the pizza with the cooked oven chips.

Cook's tips

You need a rolling pin for this recipe. If you don't have one you can use your fingers to gently flatten out the dough on a well-floured surface.
