Spring Meal Planning
We love spring at Resourceful Cook, especially this year thanks to the lovely weather we’ve been enjoying, plus all the great seasonal produce hitting the supermarkets and farmers markets.

After a winter of delicious heart-warming fare I’m now enjoying lighter meals which take advantage of new spring produce, and whenever possible, eating outside in the sunshine!

One of the reasons that resourceful cooks love spring is thanks to the abundance of locally grown seasonal produce. Instead of having been flown thousands of miles degrading as it travels, seasonal produce is usually British or, at worst, shipped in from one of our near European neighbours, retaining most of its nutrients and flavour.
Shorter transportation time reduces environmental impact, so eating seasonally means less carbon in the atmosphere – a simple and tasty way of doing your bit for the environment.
Food that’s in season tends to be cheaper thanks to the abundance of supply, minimal transportation distances, and the need to ensure that ripe local produce gets from supermarket shelf to dining table before it perishes, hence the great half-price, buy-one-get-one-free and 3-for-2 offers in the shops.
My seasonal favourites are Jersey Royals, watercress, asparagus and the great variety of berries (especially English strawberries!).
